Spaghetti con pomodoro e mascarpone

Fruity with a refreshing kick, spaghetti con pomodoro e mascarpone is a light vegetarian dish that brings something new to the dinner table. Don’t hold back when you are spicing this, you will need enough salt, black pepper, sugar and white wine vinegar to create a taste that is both creamy and subtle. Serve this delight with spaghetti, and don’t forget to garnish with fresh basil and pecorino cheese.


4-5 plum or Roma tomatoes 

8-9 sun-dried tomatoes in oil

1 onion


black pepper


1 tbsp white wine vinegar

125 gr mascarpone


fresh basil leaves, chopped

pecorino, freshly grated


Chop the fresh tomatoes, sun-dried tomatoes and the onion. Saute the onion in a pan for ca. 3 minutes in the oil of the sun-dried tomatoes. Add the fresh tomatoes together with the sun-dried tomatoes and continue frying until the tomatoes are soft and tender. Take from the pan and process with a stick blender until smooth. Spice generously with salt, freshly ground black pepper, sugar and white wine vinegar. Add the mascarpone to the tomato-onion mixture and stir. Mix with the spaghetti and garnish with basil and pecorino.
