Muffins are delicious little treats for the whole family. They come in various flavors, like blueberry, chocolate chip, banana, lemon, carrot etc. Dates and cardamon give these muffins a wonderful pungent smell. Enjoy them in good company, and serve with your favorite tea and honey.


250 gr dates without pit

2.5 dl water

125 gr margarine

1 dl sour cream

2 eggs

1.5 dl sugar

3.5 dl wheat flour

2 tsp baking powder

1 tbsp cardamon powder

2 tsp vanilla sugar


Muffins with dates and cardamonChop the dates into small pieces. Cook them in boiling water for about 5-10 minutes until the water has evaporated and the dates have a pulpy consistency. Let them cool down. Add the melted margarine and the sour cream to the pulpy mixture.

Cream the eggs and sugar until smooth. Sift the dry ingredients. Combine the smooth egg and sugar mix, the pulpy dates and the dry ingredients.

With the help of an eating spoon, pour the dough into muffin forms to about 3/4 full. Bake on 175 °C for 30 minutes or until a toothpick inserted into the center of a muffin comes out clean. Yield: 16 muffins.
