Creamy Sweet Potato Soup

This soup is almost too good to be true! Smooth like velvet, the sweet potato soup is healthy and nutritious, and above all, you can prepare it on a budget in less than 30 minutes. Despite the name, the sweet potato is only distantly related to the common potato, and it by far exceeds the nutritional value of its long-lost cousin. The pink, yellow and green varieties are also high in beta-carotene. From the middle of the 20th century on the sweet potato has become less popular – it’s time we reversed the trend!

Creamy Sweet Potato Soup


400-500 gr sweet potato

1 onion, sliced

3-4 cloves of garlic, minced

3 dl vegetable stock

3 dl coconut milk

2 tsp sambal oelek-chili paste

1 tbsp lemon juice


fresh mint leaves

Creamy Sweet Potato SoupInstructions: 

Peel the sweet potatoes and slice them into cubes. In a pot, bring the vegetable stock and the coconut milk to a boil and add the sweet potato, sliced onion, minced garlic and the chili paste. Let the soup simmer on a medium heat for 15 minutes or until the sweet potato and the onion are soft and tender. Puree the soup in a blender until smooth. Serve each plate with freshly squeezed lemon juice and leaves of fresh mint.
