Penne zucchine e pomodori secchi

Paulo Coelho writes in the Alchemist: ‘The simple things are also the most extraordinary things, and only the wise can see them.’ This is true in life, but this lesson can be applied when it comes to understanding the Italian cuisine, which can be characterized by its simplicity. Oftentimes you only use three to five ingredients, but it is essential to realize that it is the quality of those ingredients that determines the level of the meal. This particular vegetarian dish combines the light taste of the zucchini with the poignant accents of the sun-dried tomatoes. And the pasta is there to give you something to chew. Enjoy and savor every bite!

Ingredients:

1 onion, sliced

1 zucchini, sliced

olive oil for frying

8 slices of sun-dried tomatoes, sliced

sea salt and black pepper to taste

pine nuts (optional)

Penne or pasta of your choice

Parmesan cheese

Instructions: 

Saute the onion in a pan until it becomes golden. Add the zucchini slices and the sliced sun-dried tomatoes. Use enough olive oil and make sure that the vegetables mix well with it. Continue frying for a few minutes until the zucchini slices become transparent and the sun-dried tomatoes soften. Season with sea salt and black pepper. Meanwhile, cook the pasta al dente in salted boiling water. Mix the pasta with the zucchini mix. Garnish with pine nuts and serve right away with Parmesan cheese.
